Looking for a tasty treat?  Well look no further.  These bad boys are wonderful, the perfect size to take the edge off when you need just a little something sweet.  Bonus?  Vegan and paleo, not that you would ever know that when you taste them.  We loved the fact that they are cut-out cookies, so we got to crack out our favorite cookie cutters.  Yep, that’s right, you can see a ninja in the background in this picture.  Pretty awesome.  Enjoy!

 

Ginger Almond Cookies

⅔ cup almond meal

⅓ cup arroowroot flour

½ tsp ground cinnamon

2 tsp ground ginger

½ tsp ground cloves

1 tbsp honey

⅔ cup almond butter

1 tbsp almond oil

 

Preheat a fan-forced oven to 325° Fahrenheit. Place the almond meal, arrowroot flour, cinnamon, ginger, cloves, honey, almond butter and almond oil in a bowl and combine well. Roll out the cookie dough onto a sheet of baking paper, place another sheet of baking paper on the top of the dough to prevent sticking. Roll the dough until ¼ in thick. Use a cookie-cutter to cut shapes from the dough, re-roll when necessary. Place the cut cookies on a baking tray lined with baking paper and bake in the oven for 8-10 minutes or until they are slightly golden. Cool the cookies in a refrigerator before serving.
