FRIDAY FOOD FIGHT! – Cinnamon Pumpkin Apple Muffins

What can we say . . . we LOVE baking in the Fall.  Using pumpkin any other time of year just feels silly, but for 4 glorious months, you can make anything and everything with pumpkin.  Lattes, donuts, stews, chili, and yes, even muffins with pumpkin.  Oh, the power of pumpkin.


These bad boys just so happen to be: VEGAN.  They are also low in fat and in calories, but high in taste.  This is a combo of two recipes we had that just sounded too good not to combine: apple muffins and pumpkin muffins.  Add in the cinnamon and you have a hit!  Enjoy!


Cinnamon Pumpkin Apple Muffins

3/4 cup all-purpose flour

1 cup whole wheat flour

1 tsp. baking soda

1/2 tsp. baking powder

1/2 cup light brown sugar

1/2 tsp. salt

1 tsp. cinnamon

1/2 tsp. nutmeg

1/4 tsp. allspice

1/8 tsp. ginger

1/8 tsp. cloves

1 cup pumpkin puree

1/4 cup vegetable oil

1/4 cup applesauce

1/3 cup almond milk

1 cup finely diced apple

Cinnamon for sprinkling


In a medium-sized mixing bowl, stir together all of the dry ingredients. In a separate bowl, mix together the pumpkin, oil, applesauce, and almond milk. Mix the wet and dry ingredients together. Fold in the chopped apple. In a greased muffin tin (or using liners), fill the muffins up to the top.  Sprinkle on some extra cinnamon to each muffin.  Bake at 350 degrees for 35-40 minutes or until a toothpick inserted into the middle comes out clean.
