FRIDAY FOOD FIGHT – Chocolate Chip Pumpkin Bundt Cake

Bundt Cake?  Are you kidding me?  How on earth are you writing about Bundt cake?  Well . . . we are pretty sure someone famous said “Let them eat cake!”  And the hardest part about this whole healthy living and clean eating is that you feel like you have to go without the good stuff, the stuff that makes you want to eat healthy foods the other 90% of the time.  So, we’re working hard to give you some good for you foods that satisfy that sweet craving.

Not paleo, not 100% clean, but it is 100% yummy, and when you portion correctly, it is only 119 calories per serving.  Enjoy!

Chocolate Chip Pumpkin Bundt Cake

2 eggs

1 cup pumpkin puree

1/4 cup brown sugar

1/2 cup natural unsweetened applesauce

1/4 cup 100 calorie non-fat Greek yogurt

2 teaspoons vanilla extract

1/2 teaspoon cinnamon

1/8 teaspoon cloves

1/8 teaspoon ginger

1/4 teaspoon allspice

1/8 teaspoon nutmeg

1 1/2 cups all-purpose whole wheat flour

1 teaspoon baking soda

1/8 teaspoon salt

1/2 cup dark chocolate chips (OR 1/4 cup dark chocolate chips and 1/4 cup cinnamon chips)

Preheat your oven to 350 degrees.  Spray your bundt pan with baking spray and set aside.  Using either a stand mixer with the paddle attachment or a hand mixer, blend the eggs, pumpkin, brown sugar, applesauce, yogurt, vanilla, and spices.  Then add the flour, baking soda and salt and mix until combined.  Fold in chocolate chips.  Pour into the bundt pan, level and smooth with a spatula or spoon.  Bake for 35-40 minutes.  When a toothpick inserted comes out clean, remove it from the oven.  Let cool completely in the pan on cooling rack before attempting to remove.  Then cut and enjoy!
