We love peanut butter. And we love bananas. And we love peanut butter banana bread. We like it even better in cookie form. And even better than that in healthy cookie form. A great sweet fix when you are desperate for a little treat. Go ahead, reward yourself!
Soft Peanut Butter Banana Bread Cookies
2 1/2 cups almond flour
2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp sea salt
2 ripe large bananas, mashed
1/4 cup creamy peanut butter (or other nut butter)
1 tbsp pure vanilla extract
2 tbsp agave nectar
Line a baking sheet with a silicone mat or parchment paper. Preheat oven to 350F. In a medium bowl, combine dry ingredients. In a separate bowl, mash together the banana, nut butter and vanilla. Stir in dry ingredients until a dough forms. Using a tablespoon, scoop dough into rounded tablespoons on prepared baking sheet. Bake for 12-14 minutes or until cookies are lightly golden brown on top. Remove from oven and let cool completely before removing from baking sheet. Makes 26 cookies.
