Friday Food Fight (on Saturday) – Chocolate Oat Protein Bars

Sorry for the delay, Friday totally got away from us.  This is round two at an attempt to get to the perfect homemade protein bar.  This one is a little more firm than the last one we made, well suited for longer runs or bike rides where you need to store food that won’t melt.  We liked the flavor, the texture still needs some tweaking.  But they taste good, which is what is important, right?  Enjoy!


Chocolate Oat Protein Bars

3 cups rolled oats            

½ cup sesame seeds      

1 teaspoon ground cinnamon    

1 teaspoon sea salt        

1 ¼ cup Fat Free Greek Yogurt Plain

¼ cup honey     

1 cup peanut butter       

1 teaspoon vanilla extract           

1/8 cup coconut oil         

1/8 cup unsweetened applesauce          

2/3 cup raisins  

8 scoops whey protein powder


Preheat oven to 350°F. Grease a 9×13 inch baking dish. Combine dry ingredients in a large bowl.  In a separate bowl, combine the wet ingredients.  Mix the wet ingredients into the dry ingredients until thoroughly combined, and then mix in raisins & protein powder. Mix well. Spread the mixture into your prepared dish and bake for 15 minutes. Take the pan out of the oven, let them cool a little, and then slice the bars as you desire. Spread the bars out onto a cookie sheet and bake for 15 minutes more. Allow to cool, and then wrap and store in the refrigerator.
